Chicken Salad With Avocado Dressing

A sure sign of spring--I'm in salad mode.

Dressing Ingredients

1/4 cup buttermilk
1 tablespoon mayonnaise
1 tablespoon fresh lime juice
1/2 teaspoon salt
1/8 teaspoon ground red pepper
1 garlic clove, peeled
1/2 ripe peeled avocado, seeded and coarsely mashed

Salad Ingredients

About 4 cups chopped romaine lettuce
2 cups diced roasted chicken breast (or turkey)
1/2 cup thinly sliced green onions
2 tablespoons chopped fresh cilantro

What to Do:

Combine dressing ingredients in a blender or food processor, and process until smooth, scraping sides. Combine salad ingredients in a large bowl. Drizzle with dressing and toss gently to coat.

Serve with cheese toast.
